Rich & Delicious

For his birthday, SSP requested chocolate cake with whipped cream/ice cream with cherries on top. I made these brownies; he loved them, as did everyone else.

Brownie Cupcakes
adapted from:

2 cups chocolate chips, divided
1 cup butter
4 eggs
1 cup sugar
1 t vanilla
1 cup flour

Line 16 muffin tins.  Preheat oven to 325. In a microwave safe bowl melt together 1 cup chocolate chips and butter. Cool slightly.  In a large mixing bowl cream the eggs, sugar and vanilla together. Slowly add the cooled butter/chocolate mixture. Alternate with flour.  Fold in the remaining 1 cup chocolate chips.  Measure batter by 1/3cupfuls into each muffin tin.  Bake 25minutes until batter starts to crack.  Cook slightly in the muffin tin. Then remove to rack to cool completely.
