Classics With A Twist

Meatloaf is always a comfort food.  This recipe is super good.  If you like pizza and meatloaf, why not combine the two and make a pizza-loaf.

Pizza Loaf

1 1/2 lbs ground meat (beef & Italian sausage, equal parts)
1 1/2 cups oats
1 egg
1 cup pasta sauce
2 t (each) Italian seasoning and garlic powder
2 t olive oil & 1T butter
1/2 green pepper, diced
1/2 onion, diced
1/2 mushrooms, sliced
1 cup shredded mozzarella cheese
12-14 pepperoni slices

Preheat oven to 350.  In a bowl knead together meat, oats, eggs, pasta sauce and egg.  Spread out on a parchment lined cookie sheet. In a small skillet saute onions with peppers and onions, in oil and butter.   Cool slightly. Spread evenly over meat mixture. Sprinkle with cheese. Roll up jelly roll style . Pinch sides shut to prevent oozing. Bake for an hour until thermometer reads 165.
