Unstuffed: The New Way To Go

Stuffed peppers are so great. My husband and I really enjoyed this version with a friend the other night. It was very tasty. Perfection!

Unstuffed Peppers
adapted from:

1 bag instant brown rice (I found this mix at Costco), cooked according to directions
1 1/2 pounds Italian sausage
2 bell peppers, diced
1 (10oz) white button mushrooms, sliced
1 small red onion, diced

Brown sausage with peppers, onion, and mushrooms in 2T butter.  Add cooked rice; stir.  Cover and let rest for about 25minutes.  Sprinkle with Parmesan cheese.
