My boys just love pizza...especially one with 'ronnies (pepperonis). The other night the boys wanted pizza for dinner. We had about a cup of tomato sauce, a few tortillas, some mozzarella and the glorious pepperonis. I thought I would just make do and make pizza this way (as I researched on line I found that other moms have thought of this too). Today is SSP Baptism Day anniversary...perfect meal for a splendid 3 year old.
Skillet Tortilla Pizza

Soft Taco Size Tortillas
Mozzarella Cheese
Tomato Sauce (doctored up with Italian Seasoning, garlic and onion powders - and a pinch of sugar)
Favorite Toppings (pepperonis, mushrooms, peppers, onions, or whatever suits your fancy)
Warm up a large skillet/griddle. After it gets warm toss on in a tortilla. Let warm and puff. Pop bubbles as they form. Flip. Top with cheese, sauce, toppings and more cheese. Just let it melt. Remove to a cutting board. Slice into wedges (with a pizza wheel or sharp knife). Serve.
