Easy & So Tasty

Simple dinners are so nice.   Even though there are days when I enjoy the challenge in the kitchen.   Recently I made this delectable dish.  BAP raved about it and how I should make it every day. Really?! For some reason I think after eating it more than one meal in a row, he may be sick of it.  I am not sure what he enjoyed the gooey cheese or pasta or the chicken. Either way he ate every bite off his plate.  I love it when that happens.



Baked Chicken Mozzarella

2 boneless skinless chicken breast, sliced in half (so makes 4 'breasts')
salt
pepper
garlic powder
onion powder
basil (fresh or dried)
1 jar favorite marinara sauce
8 slices Mozzarella cheese (got the stuff from the fresh section at Costco)
8-12oz pasta (angel hair is good) - cooked

Preheat oven to 375. Place chicken breasts in the bottom of a greased 9x13pan.  Season both sides with salt, pepper, garlic powder, onion powder.  Pour marinara over top all. Bake for 45minutes.  Place cheese slices on top of each breast. Top with basil.  Bake until just beginning to get gooey and lightly browned (about 15 minutes).  Serve over pasta.
