I love it when cookies and/or snacks are soft and chewy (sometimes while that slight almost undetectable crunch). BAP and SSP love rice crispy treats. These sweet treats should be very chewy...not hard (as I have often made them).
Ultra Soft & Chewy Rice Crispy Treats

4 T margarine
16oz marshmallows
1 t vanilla
6 cups rice crispy cereal
Melt margarine in a electric skillet Stir in marshmallows-melt and make smooth. Add vanilla Remove from heat and stir in cereal. Cover cereal completely. Place in a well-greased 9x13pan. Cool slightly. Then spread with greased fingers. Enjoy!
