Great Fake On Take Out

Sweet and Sour with a bit of heat is so good.  Tonight I made my dear sister in law's take on Sweet and Sour Chicken; we loved it.  However BAP refused to eat his veggies (except for the huge piece of broccoli) and off he went to bed early.  I don't feel sorry for him since we warned him numerous times.  Anyways, the chicken was to die for.  SSP could not stop shoveling it in. Hopefully he sleeps well tonight (prayers!).

Sweet & Sour Chicken
Sister in law

Chicken
3-4 boneless, skinless chicken breast
salt/pepper
1 cup cornstarch
2 eggs, beaten
1/4 cup canola oil

Sauce
3/4 cup sugar
4 T ketchup
1/2 cup vinegar (I used apple cider vinegar)
1 T soy sauce
1 t garlic powder
1-2 T Sriracha hot sauce (I used closer to 1 t and did not even taste it)

Cut chicken into bite size chunks.  Coat in cornstarch; then dip into eggs. Fry lightly in oil-don't cook all the way through, just until slightly browned.

Mix sauce ingredients in another bowl  Pour over chicken chunks.  Toss.

Bake at 325 for about 1 hour; turning every 15-20 minutes so chicken gets all coated.  Serve with rice and oriental veggies and/or broccoli.
