Oops...That Worked Well

Having no energy to really cook a 'gourmet' dinner, I just threw some ingredients together and hoped it worked well. It turned out awesome. I thought I had added too much seasoning at first, but it turned out to be just right. Phew! I think this recipe would work well for chicken too.

Tuna Casserole Over Biscuits

1 (7oz) can tuna in water, drained well & 'crumbled'
4 T butter, divided
1 cup milk
1 T cornstarch mixed with 2 T cold water
1/4 t garlic powder
3/4 t lemon pepper
1/4 cup cubed cheddar cheese
1/4 diced green bell pepper
2 T diced white onion
4 biscuits cooked (homemade work well), halved

Saute pepper and onion in 2 T butter in medium saucepan. Place biscuit halves in a greased pie plate. Add sauted veggies and cooking butter. Add remaining butter to saucepan. Add milk. Quickly stir in cornstarch mixture. Boil and thicken. Add garlic and lemon pepper. Add tuna and cheese. Let cheese melt. Pour over biscuits and veggies. Bake at 425 for about 25-30 minutes until bubbly and lightly browned.

  1. Just in time! I was wondering what to make for dinner tonight, and "something with biscuits" was all I could think of. Glad you were on the same wavelength and two hours ahead!
