Gourmet Stuffed Peppers

Oh how I adore green bell peppers. Especially if they are stuffed. Such a simple and relatively cheap eat. Tonight we had my in-laws over for dinner (about 6 of us; 8 if you include BAP and SSP). I had already planned on making stuffed peppers when we decided on having them over for dinner. Just had to get more peppers. The other day I saw my inspiration for filling. Boy! was it good!

Stuffed Peppers
4 medium potatoes, peeled and diced
salt
8 oz chorizo sausage
1 onion, diced
(I added about 1 pound ground beef)
taco seasoning to taste

Cook potatoes in a pot of water. Boil just about 10-12 minutes until tender. Drain and cool. In a separate pan brown, sausage, onion and ground beef. In a large bowl combine potatoes and meat mixture.

8 Peppers (cut tops off and seed)
Boil for about 2-5 minutes. Drain. Place in greased large deep dish. Spoon filling into peppers just until reaches the top. Pour water in dish just until about 1/2 inch up the peppers. Cover and bake at 425 for about 30 minutes. Uncover. Sprinkle with shredded cheese. Bake for about 15 minutes until browned and bubbly. Serve with sour cream, salsa, etc.
